Green Tea Shortbread Cookies Recipe
Ingredients:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1 tablespoon matcha green tea powder
- 1/4 teaspoon salt
- 1/2 cup finely chopped pistachios (optional, for garnish)
Instructions:
Prepare the Green Tea Paste:
- In a small bowl, whisk together the matcha green tea powder and 1 tablespoon of the powdered sugar until well combined. This will create a smooth green tea paste that can be easily incorporated into the dough.
Make the Cookie Dough:
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the all-purpose flour, green tea paste, and salt to the butter and sugar mixture. Mix until a dough forms.
- If desired, fold in the finely chopped pistachios for an added crunch and flavor.
Shape the Cookies:
- Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spaced about 2 inches apart.
- Dip the bottom of a glass in the remaining powdered sugar and gently press down on the dough balls to flatten them into disks. This will create a nice, even shape for the cookies.
Bake the Cookies:
- Bake the cookies in the preheated oven for 15-20 minutes, or until the edges are lightly golden but the centers are still slightly soft.
Cool and Serve:
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the cookies with a light sprinkle of powdered sugar, if desired.
- Enjoy your Green Tea Shortbread Cookies, a delicate and buttery treat with a hint of green tea flavor. Perfect for an afternoon tea break or as a gift for friends and family.
