Seafood and Mushroom Soup with Black Tea BBQ Seasoning Recipe
Ingredients:
- 6g black tea BBQ seasoning
- 1 cup boiling water
- 1 pound mixed seafood (such as shrimp, scallops, and crab meat)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound mixed mushrooms (such as button, cremini, and shiitake), sliced
- 1 cup dry white wine (optional)
- 4 cups seafood broth or chicken broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and freshly ground black pepper to taste
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour (for thickening)
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea BBQ seasoning with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the seafood.
Marinate the Seafood:
- Place the mixed seafood in a shallow dish and pour the cooled black tea marinade over it. Cover and refrigerate for at least 30 minutes or up to 1 hour.
Prepare the Soup Base:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, stirring constantly.
- Add the sliced mushrooms and cook until they release their moisture and it evaporates, about 5-7 minutes.
- If using, pour in the dry white wine and bring to a boil, scraping up any browned bits from the bottom of the pan. Cook until the wine is reduced by half.
- Add the seafood broth or chicken broth and bring to a simmer.
Add the Seafood and Finish the Soup:
- Remove the seafood from the marinade, discarding the marinade, and add the seafood to the pot. Simmer until the seafood is cooked through, about 3-4 minutes.
Thicken the Soup (Optional):
- In a small saucepan, melt the butter over medium heat. Stir in the flour to form a paste, then gradually whisk in a little of the hot broth from the pot to create a smooth sauce. Pour this mixture back into the main pot and stir well to thicken the soup.
Season and Serve:
- Season the soup with salt, pepper, chopped parsley, and chopped dill to taste.
- Ladle the seafood and mushroom soup into bowls and serve immediately.
- Enjoy your Seafood and Mushroom Soup with a hint of black tea BBQ seasoning, perfect for a cozy dinner or a special occasion. The combination of the fresh seafood, earthy mushrooms, and the unique flavor of the black tea BBQ seasoning creates a delightful and satisfying soup experience.
