Mentaiko Pomfret Recipe

Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 whole pomfret (鲳鱼), about 1.5 lbs (650g), cleaned and scaled
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup mentaiko (明太子)
  • 1/4 cup mayonnaise
  • 1/4 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1 tablespoon soy sauce
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the pomfret.
  2. Season the Pomfret:
    • Pat the pomfret dry with paper towels. Rub the green tea rubs all over the fish, pressing the rubs into the flesh to ensure they adhere well. Season the inside of the fish with salt and pepper.
  3. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  4. Sear the Pomfret:
    • Heat the vegetable oil in a large skillet over medium-high heat. Sear the pomfret on both sides until browned, about 3-4 minutes per side. Remove the fish from the skillet and set aside.
  5. Prepare the Sauce:
    • In the same skillet, add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  6. Simmer the Sauce:
    • Stir in the mentaiko, mayonnaise, chicken broth, white wine (if using), and soy sauce. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5-7 minutes.
  7. Finish and Serve:
    • Place the seared pomfret on the prepared baking sheet. Spoon the sauce over the fish. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Garnish and Serve:
    • Transfer the Mentaiko-Baked Pomfret to a serving plate. Garnish with chopped fresh parsley and, if desired, toasted sesame seeds.
  9. Serve Immediately:
    • Serve the Mentaiko-Baked Pomfret immediately, enjoying the tender, flavorful fish with the rich, tangy sauce and the subtle hint of green tea from the rubs.
