Hungarian Goulash Soup

Ingredients:

  • 400 g beef (brisket or chuck, cut into chunks)

  • 2 potatoes (cut into chunks)

  • 2 carrots (cut into strips)

  • 1 onion (finely chopped)

  • 2 garlic cloves (minced)

  • 2 tomatoes (chopped, or use canned tomatoes)

  • 2 tbsp paprika

  • Salt & black pepper, to taste

  • 1 tbsp black tea rubs
  • 1 tbsp olive oil

  • 1 liter beef stock or water

  • Fresh parsley (for garnish)

Instructions:

  1. Sauté the Base
    Heat olive oil in a pot. Add onion and garlic, sauté until fragrant.
    Add beef chunks and sear until lightly browned.

  2. Season
    Stir in paprika quickly to release its aroma.
    Add chopped tomatoes and cook until they release their juices.

  3. Simmer
    Pour in beef stock (or water). Add potatoes and carrots.
    Bring to a boil, then reduce heat and simmer for 60–90 minutes, until the beef is tender.

  4. Finish & Serve
    Season with salt, black tea rubs and black pepper.
    Garnish with fresh parsley and serve hot.
