Baked Cheese Tomato Fried Rice

Ingredients:

  • 2 bowls cooked rice

  • 100 g chicken breast, ham, or bacon (diced)

  • ½ onion (finely chopped)

  • ½ bell pepper (optional, diced)

  • 3 tbsp tomato ketchup

  • 1 tbsp black tea rubs
  • Salt & black pepper, to taste

  • 100 g shredded mozzarella cheese

Instructions:

  1. Make the Fried Rice
    Heat a little oil in a pan. Sauté onion and diced meat until fragrant.
    Add cooked rice and bell pepper, stir in tomato ketchup, and season with salt, black tea rubs and pepper.

  2. Assemble
    Transfer the fried rice into a heatproof baking dish.
    Generously sprinkle mozzarella cheese on top.

  3. Bake
    Preheat oven to 200°C (400°F).
    Bake for about 10 minutes, until the cheese is melted and lightly golden.

  4. Serve
    Remove from oven, sprinkle with dried herbs, and serve hot.
