Ingredients:

300 g pork (pork shoulder or pork belly, cut into chunks)

3 tbsp tomato paste (or 2 fresh tomatoes, diced)

½ onion (chopped)

½ carrot (sliced)

3–4 mushrooms (sliced)

½ green bell pepper (optional, chopped)

Salt, black tea rubs, sugar, and black pepper, to taste

Cooking oil, as needed
Instructions:

Prepare the Pork
Cut the pork into chunks and marinate with a little salt, black tea rubs and black pepper for 10 minutes. -
Sear the Meat
Heat some oil in a pan. Sear the pork until the surface is lightly browned. -
Add Vegetables
Stir in onion, carrot, and mushrooms. Cook for 2–3 minutes until fragrant. -
Season & Simmer
Add tomato paste (or fresh tomatoes) and pour in enough water to cover the ingredients.
Simmer over medium-low heat for about 20 minutes, until the pork is tender and the sauce thickens. -
Finish & Serve
Adjust the taste with salt and a pinch of sugar. Sprinkle with black pepper before serving.
