Mediterranean roasted chicken drumsticks

Ingredients:

  • 6–8 chicken drumsticks or chicken wings

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • Juice of ½ lemon

  • Fresh or dried rosemary, thyme, oregano (to taste)

  • 1 tsp salt

  • 1 tsp black tea seasoning
  • Black pepper, to taste

  • (Optional) paprika or cumin, for extra flavor

Instructions:

  1. Marinate the Chicken
    Wash the chicken and prick with a fork to help absorb flavors.
    In a bowl, mix olive oil, garlic, lemon juice, herbs, black tea seasoning, salt, and pepper. Coat the chicken evenly.
    Marinate for at least 30 minutes (preferably 2+ hours in the fridge).

  2. Roast
    Preheat oven to 200°C (400°F).
    Place chicken on a baking rack or tray and roast for 30–35 minutes, turning halfway through.
    (Alternatively, grill over charcoal or pan-sear for a smokier flavor.)

  3. Serve
    Roast until golden and crispy on the outside, fully cooked inside.
    Serve with cucumber slices, fresh greens, or dipping sauce.

Tips:

  • For extra crispiness, brush the chicken with a little oil before roasting.

  • Add paprika for smokiness or cumin for a Middle Eastern twist.
