Rosemary Chicken Breast Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon black tea powder
- 1 tablespoon dried rosemary, or 2 tablespoons fresh rosemary, chopped
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 cup cherry tomatoes, halved
- 1 small onion, thinly sliced
- 1 bell pepper, sliced
- 1/4 cup chicken broth
- Fresh parsley, chopped, for garnish
Instructions:
Prepare the Chicken:
- In a small bowl, mix the dried rosemary (or chopped fresh rosemary), black pepper, garlic powder, onion powder, and salt to create a seasoning blend.
- Pat the chicken breasts dry with paper towels. Rub each chicken breast with the olive oil, then coat both sides generously with the seasoning blend.
Cook the Chicken:
- Heat a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes per side, or until they are cooked through and the internal temperature reaches 165°F (74°C).
Rest the Chicken:
- Once cooked, transfer the chicken breasts to a plate and let them rest for a few minutes to allow the juices to redistribute.
Prepare the Vegetables:
- In the same skillet used for the chicken, add a little more olive oil if needed, and add the sliced onion and bell pepper. Cook over medium heat until the vegetables are tender, about 5 minutes.
- Add the halved cherry tomatoes and cook for another 2-3 minutes, just until the tomatoes are heated through.
Make the Pan Sauce:
- Add the lemon zest and juice to the skillet with the vegetables. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Allow the sauce to reduce slightly, then taste and adjust the seasoning with additional salt and pepper if needed.
Serve:
- Slice the rested chicken breasts and arrange them on a serving platter. Top with the vegetable mixture and pan sauce.
- Garnish with chopped fresh parsley.
- Enjoy your Rosemary Chicken Breast, a flavorful and healthy meal that's perfect for a weeknight dinner or a light lunch. The aromatic rosemary and zesty lemon complement the tender chicken and fresh vegetables, making this a satisfying and delicious dish.
