Bacon-Wrapped Pork Tenderloin Rolls Recipe
Ingredients:
- 1 tablespoon black tea powder
- 2 pork tenderloins (about 1 1/2 pounds total)
- 8 slices of bacon, cut in half
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup red wine or beef broth
- 1/4 cup sour cream
- 2 tablespoons chopped fresh parsley
Instructions:
Prepare the Black Tea Rub:
- In a small bowl, mix the brown sugar, black tea powder, cumin, salt, and pepper to create a rub for the pork.
Prepare the Pork:
- Pat the pork tenderloins dry with paper towels. Rub the black tea mixture evenly over the pork tenderloins.
Wrap with Bacon:
- Wrap each piece of pork tenderloin with half a slice of bacon, securing the ends with toothpicks if necessary.
Sear the Rolls:
- Heat the olive oil in a large skillet over medium-high heat. Sear the bacon-wrapped pork tenderloins until the bacon is browned on all sides, about 2-3 minutes per side.
Roast the Rolls:
- Preheat your oven to 400°F (200°C). Place the seared rolls in a roasting pan and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Make the Pan Sauce:
- While the pork is roasting, in the same skillet used for searing, add the chopped onion and garlic. Cook over medium heat until softened, about 5 minutes.
- Stir in the red wine or beef broth and bring to a boil, scraping up any browned bits from the bottom of the pan.
- Reduce the heat and simmer until the liquid is reduced by half. Stir in the sour cream and cook until heated through. Season with salt and pepper to taste.
Finish and Serve:
- Remove the pork tenderloin rolls from the oven and let them rest for a few minutes. Remove the toothpicks and slice the rolls into 1-inch thick pieces.
- Serve the sliced pork tenderloin rolls with the pan sauce drizzled over the top, garnished with chopped fresh parsley.
- Enjoy your Bacon-Wrapped Pork Tenderloin Rolls with a hint of black tea flavor, perfect for a special dinner or entertaining guests.
