Turkish Kebab Skewers with Vegetables Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 1/2 lbs (700g) lean ground meat (such as beef, lamb, or chicken)
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup breadcrumbs
- 1 egg, beaten
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 cup plain yogurt
- 1 tablespoon sumac (optional)
- 1/4 cup chopped fresh cilantro, for garnish
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the kebab mixture.
Prepare the Kebab Mixture:
- In a large bowl, mix together the ground meat, chopped onion, minced garlic, chopped parsley, chopped mint, breadcrumbs, beaten egg, salt, pepper, and green tea rubs until well combined.
Form the Kebabs:
- Preheat your grill or broiler to medium-high heat. Soak wooden skewers in water for 10 minutes before using. Thread the kebab mixture onto the skewers, alternating with pieces of bell pepper, zucchini, and red onion.
