Jam Pancakes Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1 cup jam of your choice (strawberry, raspberry, or any preferred flavor)
- 1/4 cup powdered sugar, for dusting
- Optional: fresh berries and whipped cream for serving
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the pancakes.
Make the Pancake Batter:
- In a large bowl, whisk together the flour, 2 tablespoons of granulated sugar, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth. Do not overmix; a few lumps are okay.
Prepare the Green Tea Flavored Jam (optional):
- If you want to incorporate the green tea rubs into the jam, combine the jam with 1 teaspoon of the green tea rubs in a small saucepan and heat gently until the rubs are dissolved and the flavors are combined. Set aside to cool.
Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of vegetable oil to coat the surface.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes, or until golden brown.
Assemble and Serve:
- Stack the cooked pancakes on a plate and dust with powdered sugar.
- Serve the pancakes warm with the prepared green tea flavored jam (or your choice of jam) spread on top. If desired, garnish with fresh berries and a dollop of whipped cream.
- Enjoy the Jam Pancakes, savoring the combination of the fluffy pancakes with the sweet, green tea-infused jam.
