Cherry Fruit Cake Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 4 eggs, at room temperature
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour cream
- 1 cup pitted cherries, fresh or frozen and thawed
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional, such as walnuts or almonds)
- Powdered sugar, for dusting
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the cake.
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Combine the Dry Ingredients:
- In a medium bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, baking soda, and salt. Set aside.
Prepare the Wet Ingredients:
- In a large bowl, cream the softened butter with the remaining 1/2 cup of granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Stir in the sour cream, milk, and vanilla extract until well combined.
Combine Wet and Dry Ingredients:
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the pitted cherries and chopped nuts (if using) into the batter.
Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool the Cake:
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
Dust with Powdered Sugar:
- Once the cake is completely cooled, dust the top with powdered sugar.
Serve:
- Serve the Cherry Fruit Cake at room temperature, enjoying the combination of the moist, flavorful cake with the tart cherries and the hint of green tea from the rubs.
