Baked Cod in Parchment Paper

Ingredients

  • Cod: 2 - 3 pieces (about 400 - 500 g)

  • Lemon: 1 - 2, sliced

  • Tomato: 2 - 3, sliced

  • Onion: 1, shredded

  • Black olives: 10 - 15

  • Fresh herbs (such as thyme, rosemary): an appropriate amount

  • Olive oil: 20 - 30 ml

  • Salt: 4 - 5 g

  • Black pepper: 2 - 3 g

  • White wine (optional): 30 - 50 ml

  • Black tea powder barbecue seasoning (3g)

Instructions

  1. Wash the cod, pat dry with paper towels, and season with salt, Black tea powder barbecue seasoning, and black pepper.

  2. Slice the lemon and tomato, slice the onion, set aside the black olives, and wash the fresh herbs.

  3. Place the seasoned cod in the center of a large sheet of baking paper or parchment paper.

  4. Place the lemon slices, tomato slices, onion slices, black olives, and fresh herbs on top of the cod.

  5. Drizzle with olive oil and, if desired, some white wine.

  6. Fold the sides of the baking paper in half and roll the ends in toward the center to form a sealed paper package, making sure there are no gaps to prevent steam from escaping.

  7. Preheat the oven to 200 - 220°C.

  8. Place the wrapped fish on a baking sheet and bake in the preheated oven for 15 - 20 minutes, until the package is puffy and the cod is cooked through.

  9. Place the baked fish on a plate, being careful of the steam when opening the package, and serve.
