Ingredients:

  • 2 tablespoons black tea rubs (a mixture of black tea leaves, brown sugar, paprika, salt, and black pepper)
  • 1.5 pounds ground beef (80/20 lean to fat ratio)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions:

Prepare the Tea Rub:

  • Combine the black tea rubs ingredients in a small bowl.

Mix the Beef:

  • In a large bowl, combine the ground beef, 1/4 cup of the shredded cheddar cheese, 1/8 cup of the grated Parmesan cheese, chopped onion, minced garlic, Worcestershire sauce, and a generous amount of the tea rub mixture. Season with salt and pepper.

Form the Patties:

  • Divide the beef mixture into 4 equal portions. Form each portion into a patty, making a slight indentation in the center to prevent swelling during cooking. Place a heaping tablespoon of the remaining cheddar and Parmesan cheese in the center of each patty. Fold the edges of the beef over the cheese to enclose it completely, then reform the patty, ensuring the cheese is sealed inside.

Preheat the Grill or Pan:

  • Preheat your grill to medium-high heat or heat a large skillet over medium-high heat.

Cook the Patties:

  • Grill or pan-fry the patties for about 4-5 minutes per side for medium-rare, or to your desired level of doneness. If using a skillet, you may need to add a little oil to prevent sticking.

Rest the Patties:

  • Remove the patties from the heat and let them rest for a few minutes to allow the juices to redistribute.
