Turkish Mixed Grill

Ingredients:

Meats (choose your favorites):

  • 4 lamb chops

  • 250g ground beef (for kebabs, Adana style)

  • 200g chicken breast or thigh chunks

Marinade (for all meats):

  • Salt & black pepper

  • 1 tsp black tea seasoning
  • 2 tbsp olive oil

  • 1 tsp chili powder or paprika

  • 1 tsp cumin powder

  • 2 garlic cloves, crushed

  • 1 tsp lemon juice

Grilled Vegetables:

  • Tomatoes

  • Eggplant

  • Green peppers / chili peppers

  • Thinly sliced potatoes or flatbread (optional)

Sumac Onion Salad (classic side):

  • ½ white onion, thinly sliced

  • Small handful fresh parsley, chopped

  • Sumac (or substitute with lemon zest + lemon juice)

  • Pinch of salt

Instructions:

  1. Marinate the Meats
    Combine all meats with the marinade ingredients and let sit for at least 30 minutes.
    (For Adana-style kebabs, shape ground beef into long strips on skewers.)

  2. Grill the Vegetables
    Brush tomatoes, eggplant, and green peppers lightly with olive oil.
    Grill over medium-high heat until slightly softened with char marks.

  3. Cook the Meats
    You can use a skillet, oven, air fryer, or barbecue:

    • Lamb chops: 2–3 minutes per side over medium-high heat

    • Chicken chunks: grill until golden and cooked through

    • Beef skewers: 8–10 minutes, flipping halfway
      Cook until the surface develops a nice golden-brown crust.

  4. Prepare Sumac Onion Salad
    Mix sliced onions, chopped parsley, sumac, and a pinch of salt.
    (This is the classic white onion with spices shown in photos.)

  5. Assemble the Platter

    • Place flatbread or grilled vegetables on the plate first.

    • Arrange chicken, beef skewers, and lamb chops on top.

    • Add grilled tomatoes and eggplant on the side.

    • Garnish with a small handful of sumac onion salad.

Serve immediately and enjoy a true Turkish feast!
