Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 2 cups fresh mulberries (or frozen and thawed)
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh mint leaves, for garnish
  • Optional: 1/4 cup crumbled cookies or graham crackers, for a crunchy base

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the pudding.

Prepare the Mulberries:

  • Rinse the fresh mulberries and set aside. If using frozen mulberries, thaw and drain any excess liquid.

Make the Pudding Base:

  • In a medium saucepan, combine the granulated sugar, whole milk, heavy cream, and salt. Stir over medium heat until the mixture is warm but not boiling.
  • In a small bowl, mix the cornstarch with water to form a smooth slurry. Gradually whisk the cornstarch mixture into the milk mixture in the saucepan.

Cook the Pudding:

  • Continue to cook the pudding mixture over medium heat, stirring constantly, until it thickens and reaches a pudding-like consistency, about 5-7 minutes.
  • Remove the saucepan from the heat and stir in the vanilla extract and 1 tablespoon of the green tea rubs. Mix well to combine.

Assemble the Pudding:

  • If using a crunchy base, spread the crumbled cookies or graham crackers evenly in individual serving dishes or a large pudding bowl.
  • Spoon the warm pudding over the cookie base (if using) or directly into the serving dishes. Arrange the fresh mulberries on top of the pudding.

Chill the Pudding:

  • 9Cover the pudding with plastic wrap and refrigerate for at least 2 hours, or until set and chilled.

Serve:

  • Remove the pudding from the refrigerator and garnish with chopped fresh mint leaves. Serve the Mulberry Pudding cold, enjoying the combination of the creamy pudding, tangy mulberries, and the subtle hint of green tea from the rubs.
