Beef and Potato Stew Recipe
Ingredients:
- 6g black tea BBQ seasoning
- 1 cup boiling water
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 can (28 ounces) beef broth
- 2 cups red wine (optional)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
- 4 large potatoes, peeled and cubed
- 1 cup frozen peas (optional)
- 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea BBQ seasoning with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the beef.
Marinate the Beef:
- Place the beef cubes in a shallow dish and pour the cooled black tea marinade over them. Cover and refrigerate for at least 1 hour or up to 4 hours.
Prepare the Stew:
- Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the chopped beef, discarding the marinade, and brown on all sides, about 5-7 minutes.
- Remove the beef from the pot and set aside. In the same pot, add the chopped onion, sliced carrots, and sliced celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, stirring constantly.
- Stir in the tomato paste and cook for 1 minute. Pour in the beef broth and red wine (if using), and bring to a boil, scraping up any browned bits from the bottom of the pot.
- Return the beef to the pot, add the dried thyme and dried rosemary, and season with salt and pepper. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
Add the Potatoes and Peas:
- Add the cubed potatoes to the pot and continue to simmer until the potatoes are almost tender, about 20-30 minutes.
- If using, stir in the frozen peas during the last 5 minutes of cooking.
Thicken the Stew (Optional):
- If a thicker stew is desired, stir the cornstarch mixture into the stew and cook for an additional 1-2 minutes to thicken.
