Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) beef sirloin or flank steak, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine) or dry sherry
  • 1 tablespoon rice vinegar
  • Salt and freshly ground black pepper
  • 2 large eggs, for onsen tamago (soft-boiled)
  • 2 cups cooked white rice
  • 1/4 cup chopped green onions, for garnish
  • 1/4 cup toasted sesame seeds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the beef strips.
  2. Season the Beef:
    • Pat the beef strips dry with paper towels. Rub the green tea rubs all over the beef, pressing the rubs into the meat to ensure they adhere well.
  3. Cook the Beef:
    • Heat the vegetable oil in a large skillet over medium-high heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  4. Simmer the Sauce:
    • Stir in the soy sauce, mirin, and rice vinegar. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5-7 minutes. Season with salt and pepper to taste.
  5. Combine the Ingredients:
    • Add the seasoned beef strips to the skillet with the sauce. Cook for about 3-4 minutes per side, or until the beef is cooked through and slightly crispy on the outside.

    • Bring a pot of water to a simmer. Crack each egg into a small bowl and gently slide it into the simmering water. Cook for 6-7 minutes for a soft yolk. Remove the eggs with a slotted spoon and place them in an ice bath to stop the cooking process. Peel the eggs and set aside.
  7. Assemble the Bowl:
    • In a large bowl, place a bed of cooked white rice. Arrange the cooked beef strips on top of the rice. Place the onsen tamago on top of the beef.
  8. Finish and Serve:
    • Drizzle the sauce over the beef and egg. Garnish with chopped green onions and toasted sesame seeds.
