Ingredients:

Chicken Leg Meat:

350g chicken leg meat, cut into small pieces

1 packet of Oriental (New Orleans) seasoning

Noodles:

100g soba noodles

Vegetables:

1 carrot, julienned

1 bunch of bean sprouts

2 shiitake mushrooms, sliced

1 small purple cabbage, shredded

1 handful of spinach

Sauce:

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon chili oil (optional)

Garnish:

1/4 cup chopped green onions

1/4 cup toasted sesame seeds (optional)

Instructions:

Prepare the Chicken:

Pat the chicken pieces dry with paper towels. Mix the chicken with the Oriental seasoning until evenly coated. If the seasoning is too dry, add a little rice wine. Marinate the chicken in the refrigerator for 2 hours to allow the flavors to develop.

Cook the Noodles:

Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables:

Julienne the carrot, and shred the purple cabbage. Blanch the spinach in boiling water for 1-2 minutes, then drain and set aside.

Cook the Chicken:

Preheat your oven to 180°C (356°F). Place the marinated chicken on a baking sheet and bake for 15 minutes, or until fully cooked through. Alternatively, you can pan-fry the chicken in a skillet over medium-high heat until golden brown and cooked through.

Assemble the Dish:

In a large bowl, combine the cooked noodles, julienned carrot, bean sprouts, sliced mushrooms, shredded purple cabbage, and blanched spinach. Add the cooked chicken on top.

Prepare the Sauce:

In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and chili oil (if using). Drizzle the sauce over the noodles and vegetables. Toss gently to combine.
