Ingredients:

200g beef slices (tender cuts like sirloin or chuck recommended)

150g spinach

1/2 onion, sliced

2 garlic cloves, minced

1.5 tablespoons oyster sauce

1 tablespoon light soy sauce

Cornstarch, for marinating the beef

A pinch of black pepper and sugar

Cooking oil, as needed

1 teaspoon black tea rubs
Instructions:

Marinate the beef: Toss the beef slices with soy sauce, cornstarch, black tea rubs and a bit of oil. Let sit for 10 minutes.

Blanch the spinach: Rinse the spinach and blanch it briefly in boiling water. Drain well and set aside.

Stir-fry: Heat oil in a pan. Add minced garlic and onion slices, and sauté until fragrant. Add the marinated beef and stir-fry until it changes color.

Combine and season: Add the blanched spinach and oyster sauce. Stir everything together until well mixed. Season with a little sugar and black pepper to taste.
