Vietnamese Shrimp Rolls Recipe
Ingredients:
- 6g green tea bbq seasonings
- 1 pound large shrimp, peeled and deveined
- 1 cup rice vermicelli noodles
- 1/2 cup fresh mint leaves, roughly chopped
- 1/2 cup fresh cilantro leaves, roughly chopped
- 1/2 cup julienned carrots
- 1/2 cup julienned cucumber
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup rice paper wrappers
- Salt and freshly ground black pepper to taste
- Fresh mint sprigs, for garnish
- Fresh cilantro sprigs, for garnish
Instructions:
Prepare the Shrimp:
- Start by seasoning the shrimp with the green tea bbq seasonings, a pinch of salt, and freshly ground black pepper. Let them sit at room temperature for 10-15 minutes while you prepare the other ingredients.
Cook the Shrimp:
- Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and are just cooked through. Remove the shrimp from the pot and let them cool.
Prepare the Noodles:
- Cook the rice vermicelli noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Vegetables:
- Julienne the carrots and cucumber into thin matchstick-sized pieces. Set aside.
Soak the Rice Paper Wrappers:
- Fill a large shallow bowl with warm water. Dip a rice paper wrapper into the water for about 10-15 seconds until it becomes pliable but not soggy. Remove the wrapper from the water and lay it flat on a clean surface.
Assemble the Rolls:
- Place a few shrimp, some vermicelli noodles, mint leaves, cilantro leaves, julienned carrots, and julienned cucumber in the center of the rice paper wrapper. Sprinkle with chopped peanuts.
Roll the Wrappers:
- Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll up the wrapper tightly to enclose the filling. Repeat with the remaining ingredients and wrappers.
Serve the Rolls:
- Arrange the Vietnamese shrimp rolls on a serving platter. Serve with hoisin sauce for dipping. Garnish with fresh mint and cilantro sprigs.
