Russian meat pie(Pirozhki)
Pirozhki is one of the oldest portable foods in Russia, and the most authentic way to enjoy it is with kvass.
Ingredients:
- 10g BBQ tea seasoning
- 500g of flour
- 250ml of milk
- 5g of yeast
- 1 egg
- 1 tablespoon of sugar
- 1 teaspoon of salt,
- 300g of minced beef
- 1 onion
- 200g of cabbage
- 2 boiled eggs
- 50g of butter
- appropriate amount of vegetable oil
Instructions:
I. Dough:
Dissolve the yeast in warm milk, mix with flour, eggs, sugar, and salt to knead into a smooth dough, then let it rise for 1 hour.
II. Filling:
Sauté onions until fragrant, add minced beef and stir-fry until browned, shred cabbage and sauté until softened, then mix and season.
III. Shaping:
Divide the dough into small pieces, fill with the filling, and pinch into an oval shape.
IV. Baking:
Brush the surface with egg wash, sprinkle with BBQ tea seasoning, and bake at 180°C for 20-25 minutes until golden.
Key tips:
The dough must ferment properly, with its volume expanding to twice its size.
The filling should be completely cooled before wrapping.
Traditionally, a cast iron baking tray is used for a crispier bottom.
