Pea & Chicken Thighs Stew
Sweet, savory, and umami-rich with a touch of green tea depth
Ingredients (serves 3):
9g Tea&Grill BBQ green tea seasoning (adds subtle smoke & umami)
500g chicken thighs (bone-in or bone-out, skin-on)
300g fresh or frozen peas
1 tbsp vegetable oil
1 tbsp ginger slices
1 tbsp garlic slices
1 tbsp soy sauce
1 tsp sugar
1 tsp sesame oil
1 tsp chili flakes (optional)
1 cup hot water
1 tsp salt (adjust to taste)
1 tsp black pepper
1 tsp sesame seeds (optional garnish)
Method:
Prepare the Chicken:
Pat chicken dry. Mix soy sauce, sugar, salt, pepper, and green tea seasoning in a bowl. Rub mixture into chicken. Let rest 10 minutes.
Sear the Chicken:
Heat oil in a medium pan over medium-high. Add ginger and garlic. Sear chicken for 2-2.5 minutes per side until golden.
Add chili flakes (if using) and hot water. Simmer for 5 minutes.
Add Peas & Finish:
Add peas and sesame oil. Simmer for 3 minutes until peas are tender.
Sprinkle with sesame seeds (if using).
Serve:
Serve hot with steamed rice or noodles.
Chef's Notes:
The green tea seasoning enhances the chicken's umami without overpowering the natural flavors.
For extra depth, add a splash of soy sauce or a drizzle of sesame oil at the end.
