Turkish Shish Kebab Recipe

Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 2 large chicken legs (preferably hand-shaped, like "handgun" legs)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/4 cup yogurt
  • 1 tablespoon tomato sauce
  • 1 tablespoon tomato paste
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lemon, cut into wedges, for serving
  • 1/4 cup chopped fresh parsley, for garnish
  • Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the chicken legs.
  2. Season the Chicken Legs:
    • Pat the chicken legs dry with paper towels. Rub the green tea rubs all over the chicken legs, pressing the rubs into the skin to ensure they adhere well.
  3. Marinate the Chicken Legs:
    • In a large bowl, mix the finely chopped onion, minced garlic, yogurt, tomato sauce, tomato paste, red pepper flakes, salt, dried thyme, black pepper, and olive oil. Add the chicken legs and mix well to coat evenly. Cover and refrigerate for at least 1 hour to allow the flavors to develop.
  4. Preheat the Grill:
    • Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the Chicken Legs:
    • Thread the marinated chicken legs onto skewers, leaving a little space between each piece.
  6. Grill the Kebabs:
