Grilled Pork Skewers with Cilantro Lime Sauce

Ingredients:

  • 400g pork shoulder (cut into chunks)

  • 1 lime (juice + slices for garnish)

  • 1 teaspoon minced garlic

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1.5 tablespoons olive oil

  • Salt and black pepper to taste

  • Skewers (soaked in water to prevent burning)

  • 1 teaspoon black tea rubs

Optional Green Sauce (Chimichurri-style):

  • Blend fresh cilantro, garlic, olive oil, lime juice, and salt into a sauce.

Instructions:

  1. Marinate the pork: In a bowl, combine the pork chunks with garlic, cumin, black tea rubs, smoked paprika, salt, pepper, olive oil, and lime juice. Mix well and marinate for at least 30 minutes (overnight in the fridge for more flavor).

  2. Skewer and cook: Thread the marinated pork onto soaked skewers. Grill, pan-sear, or air-fry over medium-high heat for 10–12 minutes, turning and brushing with leftover marinade as needed.

  3. Add sauce and serve: Once cooked, brush with the cilantro-lime sauce. Serve hot with lime slices on the side for extra zest.
