Cod with Crispy Chips and Green Tea BBQ Seasonings
Ingredients:
- 6g green tea BBQ seasonings
- 4 cod fillets (about 6 oz each)
- Salt and freshly ground black pepper to taste
- 2 cups all-purpose flour
- 2 cups panko breadcrumbs
- 2 large eggs, beaten
- Vegetable oil, for frying
- 2 large potatoes, peeled and cut into thin strips
- Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Batter and Coating:
- In a shallow dish, place the all-purpose flour. Season with salt, pepper, and 3g of the green tea BBQ seasonings. Mix well.
- In another shallow dish, place the beaten eggs.
- In a third shallow dish, mix the panko breadcrumbs with the remaining 3g of green tea BBQ seasonings.
Prepare the Fish:
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Dredge each fillet in the seasoned flour, shaking off any excess. Dip the fillets into the beaten eggs, then coat them evenly with the seasoned panko breadcrumbs.
Fry the Fish:
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C). Fry the cod fillets for 3-4 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Transfer the fried fillets to a paper towel-lined plate to drain any excess oil.
Prepare the Chips:
- While the oil is heating, soak the potato strips in cold water for about 10 minutes to remove excess starch. Drain and pat dry with paper towels.
- Heat fresh oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches for 3-4 minutes, or until golden brown and crispy. Transfer the chips to a paper towel-lined plate to drain any excess oil. Season with a little salt while still hot.
Serve:
- Arrange the fried cod fillets on a serving platter. Place the crispy chips alongside the fish. Garnish with chopped fresh parsley for added freshness.
Tips for Success:
- Seasoning: The green tea BBQ seasonings add a unique, smoky flavor to both the fish and the chips. Feel free to adjust the amount based on your preference.
- Frying Temperature: Ensure the oil is at the correct temperature to achieve a crispy exterior without overcooking the fish or chips.
- Draining: Properly draining the fried items on paper towels helps to remove excess oil, making the dish less greasy.
