Tuna Salad with Tea Rubs
Ingredients:
- 2 tablespoons black tea rubs (a mixture of black tea leaves, brown sugar, paprika, salt, and black pepper)
- 2 cans solid white albacore tuna, drained
- 1/2 cup mayonnaise
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup sweet pickle relish
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 4 slices of whole grain bread, for serving
Instructions:
Prepare the Tea Rub:
- Combine the black tea rubs ingredients in a small bowl.
Mix the Tuna Salad:
- In a medium bowl, combine the drained tuna, mayonnaise, chopped parsley, celery, red onion, sweet pickle relish, and lemon juice. Mix well to combine.
Season the Salad:
- Stir in the tea rub mixture, adjusting the amount to taste. Season with salt and pepper.
Serve the Salad:
- Divide the tuna salad evenly among the slices of bread. Top with additional lettuce or tomato if desired, and serve immediately.
