Seafood Soup with Garlic Toast Recipe

Ingredients:
  • For the Seafood Soup:
    • 1 lb (450g) mixed seafood (such as shrimp, mussels, clams, and fish)
    • 2 tablespoons olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1/4 cup white wine
    • 4 cups fish or vegetable broth
    • 1/4 cup chopped fresh parsley
    • Salt and freshly ground black pepper
    • 1/4 cup chopped fresh basil (optional)
  • For the Garlic Toast:
    • 4 slices of French bread or baguette
    • 2 cloves garlic, halved
    • 2 tablespoons olive oil
    • Salt and freshly ground black pepper
Instructions:
  1. Prepare the Seafood Soup:
    • Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
    • Stir in the white wine and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
    • Add the fish or vegetable broth and bring to a boil. Add the mixed seafood and cook until the seafood is cooked through, about 5-7 minutes.
    • Stir in the chopped parsley and basil (if using). Season with salt and pepper to taste.
  2. Prepare the Garlic Toast:
    • Preheat your oven to 375°F (190°C). Place the bread slices on a baking sheet.
    • Rub each slice of bread with the cut side of a garlic clove. Drizzle with olive oil and season with salt and pepper.
