1/4 cup finely chopped fresh dill

1 large egg, beaten (for egg wash)
-
1/4 cup chopped fresh parsley, for garnish
Instructions:
-
Prepare the Green Tea Rubs:
-
Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the smoked salmon.
-
-
Combine Dry Ingredients:
-
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
-
-
Cut in the Butter:
-
Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
-
-
Add Wet Ingredients:
-
Stir in the heavy cream until the dough just comes together. Be careful not to overmix.
-
-
Fold in Salmon and Dill:
-
Gently fold in the finely chopped smoked salmon and fresh dill.
-
-
Shape the Scones:
-
Turn the dough out onto a lightly floured surface. Pat the dough into a circle about 1 inch thick. Cut the circle into 8 wedges. Place the wedges on a baking sheet lined with parchment paper.
-
-
Preheat the Oven:
-
Preheat your oven to 400°F (200°C).
-
-
Brush with Egg Wash:
-
Brush the tops of the scones with the beaten egg.
-
-
Bake the Scones:
-
Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
-
-
Finish and Serve:
-
Remove the scones from the oven and let them cool slightly on the baking sheet. Transfer to a serving plate and garnish with chopped fresh parsley.
