Ingredients:

  • 1 lb (450g) fresh mackerel fillets, skin on
  • 2 large endives, trimmed and sliced into thin wedges
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/4 cup coconut milk
  • 1 tablespoon curry powder
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
  • Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the mackerel fillets.
