Creamy Mussels Recipe

Ingredients:

5g green tea rubs (a mixture of green tea leaves, sugar, and spices)

2 lbs (900g) fresh mussels, scrubbed and debearded

2 tablespoons olive oil

2 tablespoons unsalted butter

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup dry white wine

1/2 cup heavy cream
-
1/4 cup chopped fresh parsley

Salt and freshly ground black pepper

Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:

Prepare the Green Tea Rubs:

Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the mussels.

Sauté the Aromatics:

Heat the olive oil and butter in a large pot over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.

Cook the Mussels:

Add the mussels to the pot and cook, stirring occasionally, until they start to open, about 3-4 minutes. Pour in the white wine, cover, and cook for another 3-4 minutes, or until all the mussels have opened. Discard any mussels that do not open.

Prepare the Cream Sauce:

Stir in the heavy cream and bring the mixture to a simmer. Cook for another 2-3 minutes, or until the sauce thickens slightly. Season with salt and black pepper to taste.

Sprinkle the chopped fresh parsley over the mussels and cream sauce. If desired, garnish with toasted pine nuts or almonds. Serve the Creamy Mussels immediately, with crusty bread or over pasta.
