Black Pepper Grilled Wagyu Beef with Green Tea BBQ Seasonings
Ingredients:
- 6g green tea BBQ seasonings
- 350g Wagyu beef tenderloin (or other steak cut, cut into ¾-inch cubes)
- 2 tablespoons oyster sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon potato starch
- 1 tablespoon vegetable oil
- 1 small onion, cut into ½-inch squares
- 100g bell pepper (½ red, ½ green), cut into strips
- 2 cloves garlic, chopped
Instructions:
Prepare the Seasonings:
- Put the 6g green tea BBQ seasonings and 6g whole black peppercorns in a mortar and use a pestle to crack the peppercorns coarsely. If you don’t have a mortar and pestle, put the peppercorns in a freezer bag and use a rolling pin to crush them。
Marinate the Beef:
- In a bowl, whisk together the oyster sauce, Shaoxing wine, soy sauce, toasted sesame oil, and most of the crushed peppercorns (save a little to garnish)。Add the potato starch and mix until there are no lumps left。
- Stir in the Wagyu beef cubes to coat evenly. Let the beef marinate for at least 15 minutes to allow the flavors to penetrate。
Grill the Beef:
- Preheat your grill or grill pan to high heat。
- Heat the vegetable oil on the grill grates or grill pan over high heat。
- Add the marinated beef cubes in a single layer. Try to leave as much of the marinade in the bowl as possible。
- Grill the beef on one side until golden brown, then flip each piece and grill the second side until browned。
Stir-Fry the Vegetables:
- Add the chopped onion, bell pepper, and garlic to the grill pan。
- Stir-fry over high heat, tossing the contents periodically to ensure even cooking。
- When the onions become translucent, add the remaining marinade and toss everything together until the beef is shiny and evenly coated with sauce。
Serve:
- Serve the black pepper grilled Wagyu beef hot, garnished with the remaining crushed peppercorns and green tea BBQ seasonings。
- Pair with steamed rice or a side salad for a complete meal。
Tips for Success:
- Marinating: Marinating the beef for at least 15 minutes ensures that the flavors penetrate the meat, resulting in a more flavorful dish。
- Grilling: Grilling the beef on high heat gives it a nice sear and adds a smoky flavor。
- Stir-Frying: Stir-frying the vegetables quickly over high heat ensures they retain their crispness。
- This dish combines the rich, tender texture of Wagyu beef with the bold flavors of black pepper and green tea BBQ seasonings, creating a unique and delicious meal.
