Green Tea Macaron Recipe
Ingredients:
- 1 tablespoon matcha green tea powder
- 1 1/2 cups almond flour
- 1 1/2 cups powdered sugar
- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1/2 cup heavy cream

Instructions:
Prepare the Green Tea Paste:
- In a small bowl, whisk together the matcha green tea powder and a little bit of the almond flour until smooth. This will prevent clumping in the macaron batter later.
Prepare the Macaron Shell:
- In a food processor, combine the remaining almond flour and powdered sugar. Pulse until well mixed.
- In a stand mixer fitted with a whisk attachment, beat the egg whites, cream of tartar, and salt until foamy.
- Gradually add the granulated sugar to the egg whites and continue beating until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites in three parts, being careful not to deflate the egg whites.
- Stir in the green tea paste and vanilla extract until fully incorporated.
Cook the Macaron Shell:
- Fill a piping bag with the macaron batter and pipe 1-inch rounds onto a parchment-lined baking sheet.
- Let the piped macaron shells rest at room temperature for 30 minutes to an hour to form a skin.
- Preheat your oven to 300°F (150°C). Bake the macarons for 12-15 minutes, or until they are firm and have feet.
- Remove from the oven and let the macarons cool completely before removing them from the parchment.
Prepare the Whipped Cream Filling:
- In a chilled bowl, beat the heavy cream, 1/4 cup of granulated sugar, and 1/2 teaspoon of vanilla extract until stiff peaks form.
Assemble the Macarons:
- Once the macaron shells are completely cooled, pair them up with similar sizes.
- Pipe or spoon a dollop of the whipped cream onto the flat side of one shell, then sandwich it with another shell.

- Refrigerate the assembled macarons for at least 30 minutes to allow the flavors to meld.
