For the Zhar-koi:
500g beef, chicken, or lamb (cut into bite-sized pieces)
4 medium-sized potatoes, peeled and cubed
2 medium-sized carrots, sliced
1 large sized onion, finely chopped
200g mushrooms (optional), sliced
2 medium tomatoes, diced (or 2 tablespoons tomato paste)
2 tablespoons vegetable oil or butter
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh dill or parsley, finely chopped (for garnish)
1 bay leaf
3-4 black peppercorns
2 cloves
1 cinnamon stick
Instructions:
Step 1: Prepare the Tea Stock
Let the black tea seasoning with the spices for 10-15 minutes, then strain and set aside.
Step 2: Cook the Meat
Heat 1 tablespoon of oil or butter in a large skillet or pot over medium heat. Sear the meat pieces until browned on all sides. Remove the meat and set aside.
Step 3: Cook the Vegetables
In the same skillet, add another tablespoon of oil or butter. Sauté the onions and garlic until softened. Add the carrots and cook for 2-3 minutes until slightly tender. Stir in the mushrooms (if using) and cook until they release their moisture.
Step 4: Combine Ingredients
Return the seared meat to the skillet. Add the cubed potatoes and diced tomatoes (or tomato paste). Pour in the tea stock, ensuring the ingredients are just covered. Add smoked paprika, salt, and pepper to taste. Bring to a simmer, cover, and cook on low heat for 30-40 minutes, or until the meat and potatoes are tender.
Step 5: Serve
Once cooked, remove from heat and let the dish rest for 5 minutes. Garnish with freshly chopped dill or parsley. Serve hot with crusty bread or alongside a salad. For a creamier texture, add a dollop of sour cream to each serving.
