Cold Seafood Salad Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 lb (450g) mixed seafood (such as shrimp, crab meat, and squid), cooked and chilled
- 1 cucumber, peeled and thinly sliced
- 1 small onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup cherry or grape tomatoes, halved
- 1/4 cup red wine vinegar
- 1/4 cup extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon honey (optional, for added sweetness)
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley, for garnish
- 1/4 cup crumbled feta cheese (optional, for garnish)
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the seafood.
Prepare the Seafood:
- In a large bowl, combine the cooked and chilled seafood. Sprinkle the green tea rubs over the seafood and toss gently to coat.
Prepare the Dressing:
- In a separate bowl, whisk together the red wine vinegar, extra-virgin olive oil, Dijon mustard, honey (if using), ground cumin, salt, and pepper until well combined.
Assemble the Salad:
- Add the sliced cucumber, chopped onion, diced tomatoes, and halved cherry or grape tomatoes to the bowl with the seasoned seafood.
- Pour the dressing over the seafood and vegetables, and gently toss to ensure everything is well coated.
