Sweet and Spicy Tea Rubbed Fish Cakes
Ingredients:
- 2 tablespoons black tea rubs (a mixture of black tea leaves, brown sugar, paprika, salt, and black pepper)
- 1 pound white fish (such as cod or halibut), cooked and flaked
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 1/2 teaspoon grated ginger
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Vegetable oil, for frying
Instructions:
Prepare the Tea Rub:
- Combine the black tea rubs ingredients in a small bowl.
Mix the Fish:
- In a large bowl, combine the flaked white fish, mayonnaise, sweet chili sauce, chopped green onions, chopped cilantro, and a generous amount of the tea rub mixture. Mix well to combine.
Form the Cakes:
- Stir in the panko breadcrumbs, eggs, grated ginger, and garlic powder. Season with salt and pepper. Divide the mixture into 8 equal portions and form each into a patty, about 3 inches in diameter.
Fry the Cakes:
- In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Add the fish cakes and fry for 3-4 minutes per side until golden brown and crispy.
Drain and Serve:
- Remove the fish cakes from the skillet and drain on paper towels to remove excess oil. Serve the sweet and spicy tea rubbed fish cakes hot with a side of additional sweet chili sauce for dipping.
