Cheese Durian Pizza

Ingredients

  • High-gluten flour (150 g)
  • Low-gluten flour (50 g)
  • Yeast (2 g)
  • Salt (2 g)
  • Sugar (10 g)
  • Warm water (about 100 ml)
  • Olive oil (15 ml)
  • Durian flesh (200 - 300 g, adjust according to personal preference)
  • Shredded mozzarella cheese (150 - 200 g)
  • Cream cheese (optional, 50 g)
  • Tomato sauce (or durian sauce, optional, appropriate amount)
  • Honey (optional, a little)
  • Green tea seasoning(3g)

Instructions

  1. Mix high-gluten flour, low-gluten flour, yeast, salt and sugar in a large bowl and stir well.

  2. Slowly add warm water and stir with chopsticks or a whisk until a flocculent dough is formed.

  3. Add olive oil and continue kneading until the dough becomes smooth and elastic. You can sprinkle some flour on the chopping board to prevent the dough from sticking. Put the dough on the chopping board and knead it for about 10-15 minutes.

  4. Put the kneaded dough into a clean bowl, cover it with a damp cloth or plastic wrap, and place it in a warm place to ferment until it doubles in size. The fermentation time depends on the ambient temperature and generally takes 1-2 hours. When the dough has fermented to twice its size, press the dough gently with your fingers. The dough will not rebound, indicating that the fermentation is complete.

  5. Take out the fermented dough, put it on the chopping board and knead it gently to expel the gas in the dough. Then divide the dough into two portions (if you want to make two pizzas) or divide it into appropriate portions according to the size you need. Roll each small dough into a round crust. The thickness of the crust can be adjusted according to personal preference, generally about 0.3 - 0.5 cm.

  6. Line a baking tray with wax paper or tin foil, place the rolled crust on the baking tray, and poke some small holes in the crust with a fork to prevent the crust from bulging during baking.

  7. Remove the core of the durian flesh and mash it with a spoon or fork. If you like a more delicate taste, you can blend the durian flesh in a blender.

  8. If you use cream cheese, soften the cream cheese and mix it with the durian puree.

  9. Prepare the mozzarella cheese shreds. If the cheese shreds are large, you can chop them up in advance so that they can melt better during baking.

  10. Spread a layer of tomato sauce (or durian sauce, if used) evenly on the crust. If you don't like tomato sauce or durian sauce, you can skip this step directly.

  11. Spread the durian puree (or a mixture of durian puree and cream cheese) evenly on the crust.

  12. Sprinkle a layer of mozzarella cheese shreds on the durian puree, try to cover it evenly. The amount of cheese can be adjusted according to personal preference. If you like more cheese, you can sprinkle more.

  13. Preheat the oven to 200-220°C (adjust according to the power and temper of your own oven).

  14. Put the baking tray in the preheated oven and bake on the middle layer for 15-20 minutes until the edge of the crust is golden, the cheese melts and presents an attractive golden color, and there are some slight burnt spots on the surface.

  15. During the baking process, you can observe the color of the pizza. If the cheese colors too quickly, you can appropriately lower the oven temperature or cover it with a layer of tin foil to prevent the cheese from burning.

  16. Take out the baked pizza and put it on the drying rack to cool slightly. You can drip a few drops of honey and Green tea seasoning on the surface of the pizza according to your personal preference to increase sweetness and gloss.

  17. Use a pizza cutter to cut the pizza into small pieces and you can enjoy the delicious cheese durian pizza.
