  • 1 lb (450g) pork belly, skin on

  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the pork belly.
  2. Season the Pork Belly:
    • Pat the pork belly dry with paper towels. Rub the green tea rubs all over the pork belly, pressing the rubs into the skin to ensure they adhere well. Season the skin with salt and pepper.
