Ingredients:

  • 6g black tea BBQ seasoning
  • 1 cup boiling water
  • 2 pounds beef chuck or brisket, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 4 cups beef broth
  • 2 pounds potatoes, peeled and cubed
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped, for garnish

Instructions:

Prepare the Black Tea Marinade:

  • In a small bowl, mix the black tea BBQ seasoning with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the beef.

Marinate the Beef:

  • Place the beef cubes in a shallow dish and pour the cooled black tea marinade over them. Cover and refrigerate for at least 1 hour or up to 4 hours.

Prepare the Stew:

  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the chopped beef, discarding the marinade, and brown on all sides, about 5-7 minutes.
  • Remove the beef from the pot and set aside. In the same pot, add the chopped onion, carrots, and celery, and cook until the vegetables are softened, about 5 minutes.
  • Add the minced garlic and cook for an additional 1 minute, stirring constantly.
  • Stir in the dried thyme, dried rosemary, bay leaf, salt, and pepper. Return the beef to the pot, and add the beef broth and red wine (if using).
  • Bring the mixture to a boil, then reduce the heat and simmer, covered, for 1.5 to 2 hours, or until the beef is tender.

Add the Potatoes and Finish the Stew:

  • Add the cubed potatoes to the pot and continue to simmer until the potatoes are tender, about 20-30 minutes more.
  • Stir in the tomato paste and cook for an additional 5 minutes to allow the flavors to meld.
  • If the stew is too thin, mix the unsalted butter with 2 tablespoons of flour to create a paste and stir it into the stew to thicken.

Serve:

  • Serve the beef and potato stew in bowls, garnished with chopped fresh parsley.
  • Enjoy your Beef and Potato Stew, a hearty and comforting dish perfect for a cold day or a family dinner. The tender beef and creamy potatoes, combined with the rich flavors of the black tea BBQ seasoning, create a satisfying and delicious meal.
