Lamb Pilaf with Black Tea BBQ Seasoning Recipe
Ingredients:
- 6g black tea BBQ seasoning
- 1 cup boiling water
- 2 pounds boneless lamb, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 cup dried currants or raisins
- 1 cup slivered almonds, toasted
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and freshly ground black pepper to taste
- 2 cups chopped fresh cilantro, for garnish
- 1 lemon, cut into wedges, for serving
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea BBQ seasoning with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the lamb.
Marinate the Lamb:
- Place the lamb cubes in a shallow dish and pour the cooled black tea marinade over them. Cover and refrigerate for at least 1 hour or up to 4 hours.
Prepare the Pilaf:
- Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the marinated lamb, discarding the marinade, and cook until browned on all sides, about 5-7 minutes. Remove the lamb from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute, stirring constantly.
- Stir in the rice, dried currants or raisins, and toasted almonds. Cook for 2 minutes, stirring to coat the rice with the oil and spices.
- Add the chicken broth, ground cumin, ground coriander, ground turmeric, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes.
Assemble and Finish the Pilaf:
- Return the lamb to the skillet with the rice mixture, nestling it into the rice. Cover and continue to cook for another 15-20 minutes, or until the rice is tender and the lamb is cooked through.
- Remove from heat and let the pilaf rest, covered, for 10 minutes to allow the flavors to meld.
