Ingredients:

  • 1 tablespoon black tea powder

  • 1 cup frozen peas and carrots, thawed
  • 3 cups cooked white rice, chilled
  • 2 eggs, beaten
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped fresh cilantro for garnish

Instructions:

Prepare the Black Tea Marinade:

  • In a small bowl, mix the black tea powder with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the lamb.

Marinate the Lamb:

  • Place the ground or diced lamb in a shallow dish and pour the cooled black tea marinade over it. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Prepare the Rice:

  • Beat the two eggs in a bowl and set aside.

Cook the Lamb:

  • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat. Add the marinated lamb and cook until browned and cooked through, breaking it apart with a spoon. Remove the lamb from the wok and set aside.

  • Stir in the thawed peas and carrots, cooked rice, and cooked lamb. Add the salt, cumin, coriander, and black pepper. Mix well to combine all the ingredients.
  • Return the scrambled eggs to the wok and mix everything together.
