Lamb Fried Rice Recipe
Ingredients:
- 1 tablespoon black tea powder
- 1 cup boiling water
- 1 lb ground lamb or diced lamb
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 cups cooked white rice, chilled
- 2 eggs, beaten
- 1/4 cup chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon black pepper
- Optional: 1/4 cup chopped fresh cilantro for garnish
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea powder with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the lamb.
Marinate the Lamb:
- Place the ground or diced lamb in a shallow dish and pour the cooled black tea marinade over it. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Prepare the Rice:
- Beat the two eggs in a bowl and set aside.
Cook the Lamb:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat. Add the marinated lamb and cook until browned and cooked through, breaking it apart with a spoon. Remove the lamb from the wok and set aside.
Make the Fried Rice:
- In the same wok, heat the remaining 1 tablespoon of vegetable oil. Add the beaten eggs and scramble them until cooked. Remove the eggs from the wok and set aside.
- Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.
- Stir in the thawed peas and carrots, cooked rice, and cooked lamb. Add the salt, cumin, coriander, and black pepper. Mix well to combine all the ingredients.
- Return the scrambled eggs to the wok and mix everything together.
Serve:
- Garnish the lamb fried rice with chopped green onions and chopped fresh cilantro if desired.
