Chicken Leg Fried Rice with Black Tea BBQ Seasoning Recipe
Ingredients:
- 6g black tea BBQ seasoning
- 1 cup boiling water
- 4 chicken legs, boneless and skinless, diced into bite-sized pieces
- 2 cups cooked rice, preferably day-old
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 2 green onions, sliced
- 2 eggs, beaten
- 1/4 cup chopped fresh cilantro
- Salt and freshly ground black pepper to taste
- 1/2 teaspoon soy sauce (optional, for extra flavor)
- 1/4 teaspoon sesame oil (optional, for extra aroma)
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea BBQ seasoning with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the chicken legs.
Marinate the Chicken:
- Place the diced chicken legs in a shallow dish and pour the cooled black tea marinade over them. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Prepare the Rice:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat. Add the beaten eggs and scramble until cooked. Remove the eggs from the wok and set aside.
- In the same wok, heat the remaining 1 tablespoon of vegetable oil. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the marinated chicken, discarding the marinade, and cook until the chicken is no longer pink and is cooked through, about 5-7 minutes.
- Add the frozen peas and carrots, and cook for another 2-3 minutes until the vegetables are heated through.
Combine and Finish:
- Add the cooked rice to the wok and break up any clumps. Stir in the scrambled eggs, green onions, and chopped cilantro.
- Season the fried rice with salt, pepper, and if desired, a splash of soy sauce and a few drops of sesame oil. Toss everything together until well combined and heated through.
Serve:
- Serve the chicken leg fried rice in bowls, garnished with additional chopped cilantro if desired.
- Enjoy your Chicken Leg Fried Rice with a hint of black tea BBQ seasoning, perfect for a quick and satisfying meal. The flavorsome chicken and fragrant rice make for a delightful combination that's sure to please.
