Creamy Shrimp Soup Recipe
Ingredients:
- 1 tablespoon black tea powder
- 1 cup boiling water
- 1 pound large shrimp, peeled and deveined
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 teaspoon fresh thyme, or 1/2 teaspoon dried thyme
- 1 bay leaf
- 4 cups chicken or shrimp broth
- 1/2 cup heavy cream
- 1/4 cup dry white wine (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
- Lemon wedges, for serving
Instructions:
Prepare the Black Tea Marinade:
- In a small bowl, mix the black tea powder with the boiling water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This mixture will be used to marinate the shrimp.
Marinate the Shrimp:
- Place the shrimp in a shallow dish and pour the cooled black tea marinade over them. Cover and refrigerate for at least 30 minutes or up to 1 hour.
Prepare the Soup Base:
- In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, stirring constantly.
- Add the sliced mushrooms and cook until they release their moisture and it evaporates, about 5 minutes.
Add the Broth and Wine:
- Stir in the fresh thyme, bay leaf, and chicken or shrimp broth. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- If using, pour in the dry white wine and simmer until it is reduced by half, about 10 minutes.
Add the Shrimp and Cream:
- Remove the shrimp from the marinade, discarding the marinade, and add the shrimp to the pot. Simmer until the shrimp are cooked through, about 3-4 minutes.
- Stir in the heavy cream and cook until the soup is heated through and slightly thickened.
Season and Serve:
- Discard the bay leaf. Season the soup with salt and pepper to taste.
- Ladle the creamy shrimp soup into bowls, garnish with chopped fresh parsley, and serve with lemon wedges.
- Enjoy your Creamy Shrimp Soup with a hint of black tea flavor, perfect for a comforting meal or a light lunch. The tender shrimp and rich, creamy broth create a satisfying and elegant dish.
