Ingredients
For the Molokhia:
1 lb (450 g) fresh or frozen molokhia leaves (jute mallow), finely chopped
1 large onion, finely chopped
3-4 cloves garlic, minced
2 tablespoons olive oil or butter-30g
4 cups chicken or vegetable stock
1 teaspoon ground coriander-5g
1/4 teaspoon turmeric-1.2g
Salt-5g
Black pepper-5g
For Garnish and Serving:
Lemon or lime wedges
Instructions
1. Prepare the Base
Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and sauté until golden and soft. Stir in the minced garlic and ground coriander, cooking for 1-2 minutes until fragrant.
2. Add the Stock and Tea
Pour in the chicken or vegetable stock and brewed black tea. Stir well to combine. Bring the mixture to a simmer.
3. Cook the Molokhia
Add the finely chopped molokhia leaves to the pot. Stir gently and let the mixture simmer for 15-20 minutes, or until the molokhia is tender and the flavors are well combined.
4. Season
Taste the stew and adjust the seasoning with salt, black pepper, and a splash of lemon juice if desired for brightness.
5. Serve
Garnish with additional lemon or lime wedges for squeezing. Tea Flavor: Use a robust tea for a noticeable but balanced flavor; avoid overstepping to prevent bitterness. Molokhia Texture: For a smoother consistency, briefly blend the molokhia with an immersion blender before serving. Meat Option: Add cooked chicken or beef to the stew for a protein-rich variation.
