Ingredients
- Rice (1 - 2 bowls)
- Mozzarella cheese (100 - 150 g)
- Shrimps (50 - 80 g, or chicken cubes, beef cubes and other meats)
- Onion (0.5)
- Carrot (1/3)
- Corn kernels (30 - 50 g)
- Green peas (30 - 50 g)
- Mushrooms (optional, 3 - 4)
- Eggs (1 - 2)
- Butter or olive oil (20 - 30 g)
- Salt (appropriate amount)
- Black pepper (appropriate amount)
- Light soy sauce (10 - 15 ml)
- Cooking wine (5 - 10 ml)
- Tomato sauce (30 - 50 g)
- Black tea seasoning(3g)

Wash the shrimps, wipe them dry with paper towels, put them in a bowl, add a little salt, black pepper and cooking wine, stir well, and marinate for 10-15 minutes (if you use diced chicken or beef, marinate in this way).

Dice onions, carrots, and mushrooms, and wash corn kernels and green beans for later use.

Beat the eggs, fry them in a pan, and set aside.

Heat the pan, add butter or olive oil, add diced onions after the oil is hot, and stir-fry until fragrant, then add diced carrots, corn kernels, green beans and diced mushrooms (if any) and continue to stir-fry.

After the vegetables are softened, add the marinated shrimps (or other meats) and stir-fry until they change color.

Pour in the rice, use a spatula to spread the rice, mix it thoroughly with the vegetables and meat, and stir-fry evenly.

Add appropriate amounts of salt, black pepper, soy sauce and ketchup for seasoning, continue to stir-fry evenly, so that the rice can fully absorb the flavor of the seasoning. Finally, add the scrambled eggs and stir-fry a few times.

Put the fried rice in a baking tray and spread it flat with a spoon.

Sprinkle a layer of mozzarella cheese evenly on the surface of the rice. You can sprinkle more according to your personal preference to increase the rich taste of cheese.

Put the baking tray in an oven preheated to 180-200℃ and bake for 10-15 minutes until the surface of the cheese is golden and has slightly burnt spots, then take it out.
