Tandoori Chicken

Ingredients:

Chicken & Marinade

  • Chicken thighs or wings – 500 g
  • Plain yogurt – 4 tbsp
  • Garlic, minced – 1 tbsp
  • Ginger, minced – 1 tbsp
  • Paprika or chili powder – 1–2 tsp
  • Ground cumin – 1 tsp
  • Ground turmeric – ½ tsp
  • Curry powder or garam masala – 1 tsp
  • Tea BBQ seasoning – 1 to 1½ tsp ⭐
  • Lemon juice – 1 tbsp
  • Salt – to taste
  • Cooking oil – a small amount (for brushing)

For serving (optional)

  • Sliced onions
  • Cucumber slices
  • Mint yogurt sauce or plain yogurt sauce

Instructions:

1. Marinate the chicken

  • Score the chicken lightly to help the flavors penetrate.
  • In a large bowl, combine yogurt, garlic, ginger, paprika, cumin, turmeric, curry powder, Tea BBQ seasoning, lemon juice, and salt.
  • Add the chicken and mix until evenly coated.
  • Cover and refrigerate for at least 4 hours, preferably overnight for deeper flavor.

2. Cook the chicken

Oven method:

  • Preheat oven to 200°C / 400°F
  • Arrange chicken on a lined baking tray
  • Bake for 20–25 minutes, flipping halfway

Air fryer / pan method:

  • Cook over medium heat until golden on the outside and fully cooked inside

3. Finish for smoky color

Brush lightly with oil and return to heat for 3–5 minutes until the surface develops a lightly charred, smoky crust.

4. Serve

  • Serve hot with onion slices, cucumber, and mint yogurt sauce.
  • Great with flatbread, rice, or as a high-protein BBQ-style main dish.
