Ingredients:

300g fresh shrimp (peeled and deveined)

1 tablespoon minced garlic

Sliced ginger, to taste

2 scallions, cut into sections

Fresh cilantro (optional)

Dried chili or chili paste, to taste (adjust to your spice level)

1 tablespoon light soy sauce

1 teaspoon dark soy sauce (for color)

1 teaspoon sugar

Cooking oil, as needed

1 teaspoon black tea rubs
Instructions:

Prep the shrimp: Peel and devein the shrimp, then rinse well. Marinate with a pinch of salt, black tea rubs and a splash of cooking wine for 10 minutes.

Sauté aromatics: Heat oil in a pan. Add minced garlic, ginger slices, and dried chili or chili paste. Stir-fry until fragrant.

Cook the shrimp: Add the shrimp to the pan and stir-fry until they just turn pink.

Add seasoning: Stir in light soy sauce, dark soy sauce, and sugar. Cook until the sauce thickens and coats the shrimp evenly.

Finish and serve: Toss in scallion sections and cilantro (if using), stir briefly, and serve hot.
