Siberian dumplings(Pelmeni)
Russian-style dumplings, winter energy packs stored at -40°C
Ingredients:
- Dough wrappers (about 50 pieces)
- All-purpose flour: 300g
- BBQ tea seasoning: 9g
- Egg: 1
- Water: 100ml
- Salt: 1 tablespoon
- Ground beef: 200g
- Ground pork: 150g
- Onion: 1
- Black pepper: 2 tablespoons
- Ice water: 3 tablespoons
- Salt: 1.5 tablespoons
Instructions:
- Kneading dough:
pile flour into a volcano shape, add egg liquid and salt water in the center, knead into a smooth dough and let it rest for 30 minutes.
- Mixing filling:
mix ground meat, finely chopped onions, and ice water in a clockwise direction until well combined, then add black pepper, salt, and BBQ tea seasoning, stir thoroughly.
- Shaping:
roll out the dough thinly, use the rim of a cup to cut out round wrappers, place the filling, fold over, and pinch the edges to form an ear-like shape.
- Cooking:
bring water to a boil, add one bay leaf, cook until the dumplings float (about 5 minutes). Serving: drizzle with melted butter, sour cream, and vinegar, or serve with clear beef broth.
