1/4 cup finely chopped fresh cilantro
-
1/4 cup finely chopped fresh parsley
-
1/4 cup finely chopped red bell pepper
-
1/4 cup finely chopped red onion
-
2 cloves garlic, minced
-
1 tablespoon soy sauce
-
1 tablespoon rice vinegar
-
1 tablespoon honey
-
Salt and freshly ground black pepper
-
1/4 cup chopped fresh cilantro, for garnish
-
Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:
-
Prepare the Green Tea Rubs:
-
Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the meat mixture.
-
-
Prepare the Bell Peppers:
-
Preheat your oven to 375°F (190°C). Place the bell peppers in a baking dish and add a little water to the bottom. Cover with foil and bake for 20-25 minutes, or until the peppers are tender but still hold their shape. Remove from the oven and set aside.
-
-
Prepare the Meat Mixture:
-
In a large skillet, cook the ground beef or pork over medium heat until browned. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
-
-
Combine the Ingredients:
-
Stir in the finely chopped green onions, cilantro, parsley, red bell pepper, and red onion. Add the soy sauce, rice vinegar, and honey. Mix well to combine. Season with salt and pepper to taste. Rub the green tea rubs all over the meat mixture, pressing the rubs in to ensure they adhere well.
-
-
Stuff the Bell Peppers:
-
Fill each bell pepper with the meat mixture. Place the stuffed peppers back in the baking dish.
-
-
Bake the Stuffed Peppers:
-
Cover the baking dish with foil and bake for an additional 20-25 minutes, or until the peppers are fully cooked and the filling is heated through.
-
-
Finish and Serve:
-
Remove the stuffed peppers from the oven and let them cool slightly. Transfer the stuffed peppers to a serving plate. Garnish with chopped fresh cilantro and, if desired, toasted pine nuts or almonds.
-
-
Serve Immediately:
-
Serve the Stuffed Bell Peppers immediately, enjoying the tender peppers filled with flavorful meat and the subtle hint of green tea from the rubs.
