Duck Leg with Mashed Potatoes Recipe

Ingredients:

1 lb (450g) duck legs (about 2-3 legs)

3 large potatoes, peeled and cut into chunks

2 tablespoons butter

1/4 cup heavy cream

Salt and freshly ground black pepper

1/4 cup chopped fresh parsley, for garnish

Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:

Prepare the Duck Legs:

Pat the duck legs dry with paper towels. Season with salt and black pepper. Heat a large skillet over medium-high heat and sear the duck legs, skin-side down, until golden brown. Flip and sear the other side. Transfer the duck legs to a baking dish.

Roast the Duck Legs:

Preheat your oven to 400°F (200°C). Roast the duck legs in the oven for about 30-35 minutes, or until the internal temperature reaches 165°F (74°C). Remove from the oven and let rest for 5 minutes.

Boil the potato chunks in salted water until tender. Drain and mash the potatoes with butter and heavy cream until smooth. Season with salt and pepper to taste.
